Broccoli is available in the west in abundance and most Indians living in the west, use it in the saag, because Baathu, is not available. No one community has monopoly over Sarson saag, there are many versions of the saag within Punjab. Btw I am Punjabi.
Aise nahi banta h saag na to isme broccoli padti h na hi tamatar ,,, isme methi bhi padti h madam ,,,,or ise onion ke sath serve nahi karte iske saath radish khate h …..samjhi kundra ji
Bahut acche….I make saag almost the same way but..But. .what I do…bathua methi sarso or palak ko mota mota kaat Kat bade cooker main daal kar saath main what I do ..I add Garlic ki 5 SE 7 cloves, 1 inch adrak kata hua, 5 ya 7 Hari Mirchi, namak and then 3 seeti tak pakana or thanda karna…uske baad blenderain blend kar ke…Chonk lagana…usme pyaz light brown hone tak garlic 4 cloves OE adrak lambe lambe Kate hue ek inch ke tukde…or fir tomato daal kar acche SE pakana or fir saag add karna….Then add "Aalan" …Aalan ka MATLAB aate ka ghol Pani main Mila hua…lagbhag ek katori…us ghol ko dheere dheere daal kar pakana…ghumaate raho.ubaal aane tak..5 minutes ke baad slow kar ke 10 minutes or pakana slow flame par…it's ready….yummmmmm hota hai…ooper SE chaho to cream ya Safed noni ghee daal kar khao…wah ji Wah.
