  3. These recipes have very little/no flavor. I get he's trying to cut down sodium, but salt does more than add sodium or salty flavor. It draws out the water from the meat which concentrates the meat's flavor, while also putting soluble proteins on the surface (which caramelize during cooking) for even more flavor. Salt and pepper on their own add more flavor than these mixtures.
