Caesar Chicken Salad with Pasta – Simple and Delicious



Our Caesar chicken salad is made with pasta, spices, and a fantastic home made dressing which is simply out of this world. It can be served as a side dish.

  2. Can't find my way to this recipe on Dave's web site, so if anyone else is, too, here's what I've written down. Recipe seems a good keeper candidate:
    Caesar Chicken Salad with Pasta

    PASTA
    1 cup rotini

    Cook, drain, set aside.

    DRESSING

    Whisk together until well combined:

    1/2 cup mayonnaise

    2 tablespoons olive oil

    1 tablespoon dijon mustard

    1 tablespoon worcestershire sauce

    1 teaspoon (2 cloves) minced garlic

    1/4 cup parmesan cheese

    juice from 1/2 lemon

    salt & pepper to taste

    SALAD

    romaine lettuce cut in bite-sized chunks (6-7 cups?)

    6-7 cherry tomatoes, cut in half (optional)

    pasta, previously cooked

    cooked chicken, whatever amount is on hand) (1 cup?)

    dressing, previously made

    1/2 cup croutons

    Assemble salad ingredients in large bowl. Top with desired amount of dressing and about 1/2 cup of croutons. Toss until salad is well combined. Mmm-m-m.

Dave, this is a great recipe, especially to eat out on the deck in hot weather, believe it or not, my grand daughters will eat this, the ones that are 5 and 2, they say hello uncle Dave, i tell them they are little piggy, pig, pigs, lol. They eat healthy and are not overweight though. Have a great day buddy.
